Vin Jaune is a specialty of the Jura region of France.It is unique, riduculously complex and extraordinary. So what is Vin Jaune? In a nutshell it is dry wine made exclusively with the local Savagnin grape. The aging of the wine takes place under a " veil" or layer of yeast; this process is called " sous voile". It results in a wine with nutty notes and richness. The vines for this wine average 450 years and from this we get concentration and fullness. The acidity is high carrying the mineral notes into a powerful penetrating palate presence. These wines are always bottled in 62cl bottles called clavelins because during the period of required aging 62% of the original amount of wine remains. Try these wines as the folks of Jura do: foie gras, poultry or seafood with cream sauce, or cheeses such as aged comte, morbier or a bloomy mont d'or or camembert. Extra aging in both barrel and bottle are required prior to release.
